Vegetarian Protein Salad with Haloumi Bacon

I was lucky enough to make this salad on Studio 10 the other morning, if you want to see me in action check it out here.

This is one of my favourite and hearty salads that pleases even the dedicated carnivores out there. Full of protein from the lentils and quinoa as well the spinach, this salad packs a punch and to top it off, some crunchy 'Haloumi Bacon' to get you coming back for more.

Great as an easy main or side salad to you spring and summer dishes!


Serves 4.

Salad

2 cups of lentils (cooked and cooled)

2 cups of quinoa (cooked and cooled)

1/2 bunch of parsley (chopped roughly)

1/2 bunch of coriander (chopped roughly)

1/4 bunch of parsley (chopped roughly)

Juice of 1 lemon

Drizzle of olive oil

Salt

Pepper

> Mix together

 

Haloumi Bacon

Thinly sliced haloumi 

Sprinkle with olive oil and smoked paprika.

> Fry on medium high heat in batches until dark golden and crispy on both sides.

 

Top with

2tsp of Slivered Almonds (toasted)

2tsp of Pine Nuts (toasted)

2tsp of Pepitas (toasted)

1 x pommegranate

1 wedge of lemon

Dressing

1 cup of yoghurt

1 - 2 teaspoons of cumin

1 tablespoon of honey
