Spiced Apple French Toast Brioche


Serves: 4-6

4 eggs

185 ml (¾ cup) pouring cream

125 ml (½ cup) milk

1 tablespoon vanilla essence

1 teaspoon ground cinnamon

50 g (2 tablespoons) unsalted butter

6 brioche buns, halved

Ice-cream, to serve

Almond crumble

1/3 cup plain flour

50g (2 tablespoons) unsalted butter

¼ cup brown sugar

2 tablespoons rolled oats

2 tablespoons slivered almonds

Salted butterscotch sauce

50 g (2 tablespoons) unsalted butter

60 ml (¼ cup) pouring cream

¼ cup brown sugar

½ teaspoon vanilla essence

½ teaspoon salt

Spiced apple

800 g tin sliced apple

2 tablespoons water

½ teaspoon ground cinnamon

¼ cup brown sugar


1.     Preheat the oven to 180°C. Line a baking tray with baking paper.

2.     To make the almond crumble, place all the ingredients in a bowl. Using your fingertips, rub the butter into the flour until the mixture resembles coarse breadcrumbs. Spread the crumble over the lined tray and bake for 10 –15 minutes or until golden. Remove from the oven and set aside until cool. Reduce the oven temperature to 100°C.

3.     To make the salted butterscotch sauce, place all the ingredients in a microwave-safe bowl. Cook for 2 ½ minutes or until bubbling. Alternatively, place the ingredients in a small saucepan and bring to the boil over medium heat. Set aside until needed.

4.     To make the spiced apple, place all the ingredients in a microwave-safe container or a small saucepan and set aside until ready to serve.

5.     Place the eggs, cream, milk, vanilla and cinnamon in a bowl. Whisk together until well combined.

6.     Melt half the butter in a large non-stick frying pan over medium heat.

7.     Dip half the brioche into the egg mixture until well soaked. Allow the excess egg mixture to drip off, then place into the pan and cook for 2 – 3 minutes on each side or until golden. If the bread is browning too quickly, reduce the heat a little. Once cooked, place on a baking tray lined with baking paper, and keep warm in the oven while you repeat the process with the remaining brioche and egg mixture.

8.     Warm the prepared spiced apple in the microwave for 1 1/2 minutes or stir over low heat in the saucepan.

9.     To serve, divide the cooked brioche among plates. Top with the spiced apple, almond nut crumble and a drizzle of salted butterscotch sauce. Finish with a scoop of ice cream.
