Coconut Berry Smoothie

A healthy and taste bud tantalising smoothing from the new Cookbook by Jamaica Blue, "Classics with a Twist"

From the first time I made this smoothie about 2 weeks ago my family has gone nuts on it, even though it's cold mornings here in France. It is on regular rotation for the foreseeable future in this household....and I have zero problems with that!


Coconut Berry Smoothie

Dairy-free/Gluten-free

Serves: 2

 Ingredients

1 cup frozen blueberries

250 ml (1 cup) coconut water

1 banana

1 lemon, juiced

2 tablespoons almond meal

2 tablespoons honey

Garnish

2 tablespoons fresh or frozen blueberries

2 tablespoons toasted flaked coconuts

2 fresh mint sprigs

Method

1.     Place all the ingredients except the mint into a blender and process for 1 minute or until smooth and creamy. 

2.     Pour into glasses and garnish with mint leaves, toasted flaked coconuts and blueberries.
